Sweet Potato Nachos

I actually do not like traditional nachos with queso. Call me crazy but I think queso tastes rubbery and gross. I am here for the real cheese and I wanted to level up my sweet potatoes. I originally made these with yellow potatoes but I think they taste better with sweet potatoes.

Sweet Potato Nachos

Description

I love having these with burgers or chicken, but they could also make an amazing appetizer or snack. I cut these potatoes into mandolin slices.

    Cook your bacon ahead of time, I cook mine in the over on a cast iron pan.

    After bacon is cooked, set aside and chop it up once its cooled.

    Preheat Oven to 400 degrees F.

    Slice your potatoes into mandoline slices and coat with melted coconut oil or ghee. Add spices and spread on a baking sheet.

    Chop up your tomatoes and shred cheese and coat them over the potatoes.

    Add bacon.

    Bake for 20-25 minutes (depending on size of potatoes.)

    Add onions t the last 5 minutes of the baking period.

Note

Notes for Cheese: I would recommend getting organic and also buying it by the block instead of a bag of shredded cheese. The bags of shredded cheese tend to have more additives. At the end of the day, it’s your life. Do what you want or what you can. This is just my recommendation.
