Sweet Potato Beef Chili

I am not a huge bean fan, but my husband loves beans in chili. I decided to give it a go and I created this hearty soup with a smokey flavor.

A smokey, cold weather chili with sweet potatoes and fire roasted tomatoes. 




  1. Instructions


    You can use a crock pot or the slow cooker method on your instant pot for  this.

    Chop up the onion, red pepper, carrots and potatoes.

    Sauté the onions and red pepper for 3-5 minutes in the instant pot with some  coconut oil or ghee.

    Add in the ground beef and brown slightly just so you can chop up the ground beef into pieces.

    Turn off the sauté mode.

    Add in the canned tomatoes, chopped potatoes, spices and broth.

    Cook  on low for eight hours or high for six hours.

    Once your cooking is complete you can add  the canned beans directly into the soup.   If you do not like beans or don’t eat them, this recipe is still delicious without them.

    Top your soup with some avocado, sour cream, cheese, etc..
