Slow Cooker Chicken Tortilla Soup

I wanted to create a taco soup without the beans and corn but I also wanted it to be hearty and filling. This can be made as a slow cooker meal or quickly with your instant pot.

A delicious blend of tomatoes, zucchini, chicken and taco seasoning.

    Chop onions, tomatoes, bell peppers and zucchini. 

    Add onions, tomatoes, bell peppers, and chicken to your slow cooker or instant pot.

    Top with spices, zucchini and add broth. 

    Turn slow cooker on for low at 8 hours or high at 6. 

    If you want to use your instant pot and do not want to use the slow cooker method, you can put the pressure cook on the soup setting for 15 minutes.

    When your soup is ready, add as many siete chips as you would like, add in cilantro and top with avocado. 

    Pull out your chicken and shred it or chop it into small pieces, place back into the soup

    Enjoy.
