Greek Chicken and Potatoes

I love dinners that are easy clean up and create as little of a mess as possible. I also love anything with lemon, oddly enough I do not like lemon desserts though. I feel like I am supposed to ramble on and on like most people do in blogs. If you do not want to read this, it will not hurt my feelings. I finally finished the ACOTAR series and loved it. I am currently reading Fourth Wing and that has been amazing so far.

Sheet Pan Greek Chicken and Potatoes

A delicious, tangy sheet pan chicken, infused with dill, parsley, lemon and garlic. 




  1. Instructions

    Preheat the oven to 400 degrees Fahrenheit 


    Chop the mint and any other fresh herbs you are using and set aside. 

    Mix the olive oil, spices, fresh herbs and lemon juice in a bowl and add in the chicken, potatoes and veggies. Mix them and coat them as you go. You have have to add a little more olive oil.


    Evenly space out chicken, veggies and potatoes on baking sheet. Cut 2 lemons in half and into wedges and align around the veggies and potatoes. 

    Bake at 400 for 20 minutes, you may need to turn zucchini and carrots at the ten minute mark.

    This pairs well with homemade ranch dressing.
