Mexican Ground Beef Sweet Potato Skillet

Delicious Mexican take on sweet potatoes

I love quick meals because I am a stay at home Mom with a two year old and my husband and I both workout a lot so we are both always hungry. I don’t always have time to spend an hour cooking each night. This recipe is quick and delicious. Mexican food is a good go to for us because that is one thing we can both agree that we like. I decided to make one without pre-packed taco seasoning. A lot of the time pre-packed seasonings contain poor ingredients. Making your own blend at home is easy and delicious. I have sweet potatoes almost every single day and I get bored having them the same way so I wanted to add a Mexican flare.

This dish has a great Smokey flavor and is amazing with some rice or gluten free or sourdough tortillas.



  1. This is really as simple as it gets. Chop all of your produce.

    Chop potatoes into small square and finally chop the onions and pepper.

    Start with cooking the potatoes because those take the longest to cook. Make sure to coat the pan in either coconut oil, ghee or grass fed butter, you could also use tallow. Once the potatoes are cooked about halfway, you can add the onions and peppers, add the meat last and then add the spices and salsa. Be carefully with the garlic powder because it can burn, so I would add it towards the end.

    USE a cast iron or oven safe skillet in order to finish this dish in the oven to give the potatoes a nice texture.

    If you are going to finish in the oven then make sure and preheat it to 400.

    If you do not have such a pan you can do the entire thing on the stove top.

    If you want to throw in the oven you can finish it off for 5 minutes in the oven.

    Finish off with cilantro if you would

Salsa: I always recommend reading your ingredients on your salsa. I like to go for organic brands and I love Trader Joe’s. 

Ground Beef: For this recipe I use 85/15

Pepper: So I do not personally like pepper so I never use it in my recipes, go ahead and add it if you are a pepper fan.
