Instant Pot Mexican Shredded Chicken

Instant Pot Taco Meat

This is a weekly staple in my house because it is super fast and you can use it with burrito bowls or tacos. You only need a few spices in your cabinet to make a clean and delicious taco seasoning. Those packets you buy from the store sadly contain poor quality ingredients. It will take you less than 60 seconds to make this blend at home.

A blend of chili powder, paprika and ground cumin creates a quick and easy staple meal.

  1. Instructions

Coat the bottom of your instant pot in some coconut oil or ghee.

Place chicken breast in and add all of the spices on top of the meat. You can throw a lime in there if you want some extra flavor.

Add 1 cup of water or broth and pressure cook for 10 minutes.

Once your instant pot is finished and has naturally released the steam, you can shred your chicken.

    Options for shredding:

A great hack is to use a hand mixer with the chicken and shred it while it is still in the instant pot, or you can put it in a separate large bowl and mix it there.

You can also use your kitchen aide to mix it. I like using the wire whisk tool.

If you do not have either of these options, you can always use your fork and knife.

Once complete, you can utilize this meat in whatever fashion you wish. Taco bowls, tacos, burritos, over some tortilla chips, etc.
