This sweet potato soup is savory and has a creamy texture. You can omit the bacon or add as much as you want. This is great for leftovers and you can freeze it.

A delicious blend of sweet potatoes, carrots, onions and bacon.

    Cook your bacon, if you cook it in the oven it will take longer (which is why I plan for twenty minutes of prep time) If you want to knock time off, then cook it on the stove. 

    Chop onions, carrots and sweet potatoes and mince the garlic.

    Add oil in the instant pot, coconut oil, ghee or olive oil, grass fed butter also works. 

    Add onions carrots and sweet potatoes and lightly saute for 2-3 minutes, then add the garlic at the end and make sure to stir frequently to make sure the garlic does not burn. 

    Turn off the saute feature and add the broth, spices and coconut milk. 

    Set the soup feature on high for 15 minutes. 

    Once the time is complete and instant pot is done releasing pressure, remove the soup contents into a vitamin or blender and blend until it reaches a soup consistency. Return the soup to the instant pot and enjoy. 

    Add Bacon and parsley at the end.
