    Preheat oven to 375.

    Coat a winning of a brownie or casserole pan. I used an 8x8.

    Coat it with coconut oil or ghee (NOT PAM)

    Use a stand up mixer or a handheld mixer and mix together the shortbread. The Butter does need to be room temperature.

    Once that is completed, spread the shortbread all throughout the pan and bake for 25-30 minutes.

    When you remove it allow it to cool and then place in the fridge for 20-30 minutes.

    Date Sauce:

    Use a blender or food processor to blend together the dates(pitted), coconut oil and vanilla. It should create a creamy texture.

    Chocolate sauce:

    Use a saucepan and melt 1 cup of chocolate chips and slowly add in the coconut milk and maple syrup. Make sure to continue to stir so it does not burn. Do this until out creates a creamy texture and is easily spreadable.

    After you allowed the shortbread to cool in the fridge, spread the date sauce all over it and place back in the fridge for 20 minutes or you could do the freezer if you want it faster. Basically it needs to cool and harden on top.

    Lastly, you add the chocolate sauce and put that on top of the date sauce.  Place in the freezer until it hardens. 30 minutes or so.

    You may have to thaw it out if you leave it in there too long.

    They will be difficult to cut so be mindful and cut into squares of your desire. After I cut them up I placed them in a glass container and store in freezer.

Disclaimer: 

These will be very crumbly due to them being gluten free, I recommend coating your pan in coconut oil so it does not stick.
