I love mangos! They are on of my favorite fruits. I also love salsa! I notice that not everyone loves onions or tomatoes, so I decided to make a salsa without either of those. Roasted carrots are also one of my favorites and I incorporate those almost daily. 

My daughter is almost 2 and has never slept thru the night. I am so exhausted. I am also still breastfeeding, which I am very proud of. However, I am getting tired of doing that as well. Cooking is one thing that I look forward to doing. Okay, I do not love doing it all the time but I really enjoy creating healthy meals.

I use to love meals like this in college. I came to realize that most of these takeout meals involve soy sauce and a bunch of other additives. I am not a fan of soy and I personally do not recommend it.

A delicious way to use mango and involve salsa to the dish. It goes well with white rice and topped with extra Avacado.

  1. Marinade:

    Dice up the mango and gather 1/4 cup and place it in a bag for a marinade.

    Combine all of the spices and the coconut aMinos and the juice of one lime. Marinade in a bag or in a bowl with a covering for as little as 30 minutes or overnight. The longer you can do it the taster it will be. I wouldn’t recommend marinating longer than 24 hours.

    Salsa:

    Chop up the cilantro, cucumber and dice up the avacado into cubes and add in the remaining mango. Throw in the juice of the second lime and top with salt.

    Directions:

    Once you remove the chicken from the bag throw on a cast iron skillet or any other pan along with some ghee, grass fed butter or coconut oil and grill throughly until cooked.

    Serve with rice and any other side you would like.

This recipe is delicious with rice, The Nutritional facts do not take into account the rice.

 

Marinading the chicken for two hours or more would make it the most flavorful but you do not have to do that.
