Date Glazed Delicata Squash

I love squash, I really wanted to find a way to make squash sweet and desirable. I know a lot of squash recipes are loaded with brown sugar. In my opinion this is just as sweet and has a delicious texture. It is a little bit of a messy recipe to make, so be prepared.

Using my date paste and some cinnamon, this recipe makes for a delicious side dish. 




  1. Instructions


    Preheat oven to 375

    Chop squash into thin slices and remove seeds. You do not have to peel it unless you wish to do so.


    Take the date paste and place it in a bowl. You will want to try and turn the paste into a thinner consistency, so add some water to it and stir it up, so its easier to coat on the squash.

    Coat each slice of squash with the paste, you can do this by either dunking it in the paste and turning it until it is properly coated, or  you can use a pastry brush and brush them on. 

    Once each slice is coated, drizzle with some coconut oil or olive oil and bake for 25-30 minutes.
