Gluten Free Chicken Parmesan

I feel like I need to say something in this blog because it looks strange without some sort of intro. So instead of making up a story about chicken Parmesan, I will tell you about the terrifying Wild Turkeys that we have to live next to in our townhouse. They literally just stomp around and gobble and they block the roads and fan their feathers. They jumped out and scared me a few mornings ago and it was before the hour of 7:00AM, so I was not awake yet. I am scared of birds. I actually am scared of most things that fly. I feel like this blog post would be funnier if I could include emojis. Also, I know my grammar is bad. Writing is not my strong suit. Well, nothing in school was my strong suit. So feel free to make fun of me and be bothered by my poor grammar. Hopefully this recipe makes up for it.

I wanted to create a gluten free option but I also wanted to try something different than traditional gluten free bread crumbs. A lot of gluten free bread crumbs don’t have the best ingredients and I wanted to stick with a cleaner option. If you do not eat pork but still want to try this recipe, you can use some gluten free bread crumbs. I have not tried them but I believe they would work just fine.



  1. Instructions


    Preheat Oven to 400 F

    Slice up your Chicken breasts into cutlets, you should have about four slices from each breast.

    Whisk the egg in a bowl and set aside

    Blend up the pork rinds until they create a powder, add them to a separate bowl and throw in the seasoning and salt.

    Coat each slice of chicken in the egg mixture.

    Then coat in the separate bowl of pork rinds.

    If you choose to coat your baking sheet in oil, please coat with coconut oil, avoid any type of vegetable oil or Pam cooking spray.

    Best option would be to use unbleached parchment paper if you are not using any type of oil.

    Once they are on the baking sheet, top with shredded parmesan cheese.

    Bake at 400 for 20 minutes.

    Take out after 20 minutes and top with desired amount of pasta sauce and Mozzarella cheese.

    Bake for another 10 minutes.

    Top with some Glute free pasta, zucchini noddles or spaghetti squash.
