A healthier take on Barbecue

To be honest, I don’t love barbecue, which is funny because I used to live in Texas. My Husband loves it and I wanted to create a healthy dish for him. Traditional barbecue sauce contains a lot of sugar as well as other additives like high fructose corn syrup. This always made me feel gross and sick, which is probably why I never liked barbecue.

Description

A delicious blend of savory potatoes, sweet barbecue sauce and topped with ranch dressing. 

Ingredients

    Step 1: Chop your potatoes into quarter pieces. Place the Chicken, bacon and potatoes on what giant baking sheet, coat the potatoes with coconut oil, avocado oil or olive oil and add salt and pepper if you would like. You can also add the salt and pepper to your chicken. Bake at 400 for 18-20 minutes. 

     

    Step 2: Pull the pan out of the oven and you pay have to pull the chicken and bacon off and cook your potatoes for longer depending on how small you cut them

    Step 2: Make the BBQ and Ranch sauce.

    Step 4: Coat the cooked chicken with BBQ sauce.

    Step 5: Pull the potatoes out once they are crispy. Put them in the bottom of an 8x8 casserole dish, put the BBQ chicken on top and then throw the bacon on top. Top everything with the Ranch sauce.

    Step 6: Bake at 400 for 15 minutes

    For the Ranch I recommend mixing everything together in a bowl or jar. I avoid using a blender because it tends to make the sauce too runny.
