Baked Berry Oat Bars.

I am all about berries! I’m also all about Oatmeal. As a new Mom, I have realized how challenging it can be to sit down and eat a snack. It is so much easier to just grab something instead of taking the time to heat something up or cook something. Also, I love food and need all the snacks.

I think these are better warmed up they can be delicious as a cold treat too. They only have 3 grams of added sugar (Maple Syrup).

Recommendations

I recommend using Quick Cooking Oats ( I like Bobs Red Mill), because they tend to bulk together better. You can use regular Oats but they tend to turn out more crumbly and do not stick together as well.

Can I use other Plant based milks?

I have not tried it with any other milk but I am sure that cashew milk would work the same. Coconut milk can be a little finicky to bake with, you may have to use less milk if you choose to use coconut.

Can this be vegan?

I have not tried to make this vegan but you could simply trying swiping out the egg and using a flax egg. ( 1 Tbsp of ground flaxseed with 3 tbsp of water, whisk together and let sit)

Ingredients

1 3/4 Cup Quick Cooking Oats

2 Tbsp of Pure Maple Syrup

1 Egg

1 cup of frozen berries ( I used frozen mixed berries). Fresh Berries would work too.

1 tsp of Cinnamon

1 tsp Nutmeg

1 tsp Vanilla

1 1/4 cup of Almond Milk

1/2 cup of Natural Almond Butter (Other Nut Butters would work too)

Directions:

Preheat Oven to 350.

Use an 8×8 baking pan and coat with coconut oil or Avocado Oil.

Mix all of the Ingredients together in a large bowl and pour into the pan.

Bake for 30 minutes and let coo.

I cut them into 9 squares and store them into an air tight container in the fridge.
