Arugula Strawberry Salad

I am all about salads with fruit in them! I could literally eat berries all day long. I wanted to find a way to incorporate arugula into a tasty salad. I am not a huge fan of plain arugula because it has such a mustardy taste. By throwing in some strawberries and mint and topping it with a fruity vinaigrette, the bitterness of the arugula really calms down. 

Arugula is amazing for you! It is packed with nutrients like Vitamin A, K and folate. It is also a powerful antioxidant, and can help prevent cancer. It also helps eye health, heart health and digestion. This is one of the best leafy greens that you can buy. 

Ingredients:

1 cup of Arugula

1 cup of Spinach

1 cup of diced cucumbers

1 cup of sliced cherry tomatoes

1-2 tbsp of diced fresh mint

Strawberry Vinaigrette

1/3 cup of fresh strawberries

1/4 cup of olive oil

2 tbsp of apple cider vinegar

1/4 tsp of salt

1 half of lime juiced

1 tbsp of honey

This salad is pretty self explanatory, just throw all of the ingredients into a bowl and mix them up.

For the dressing, I mixed everything in my Vitamix. You could use a regular blender. This could also be made with any berry, raspberries would also be great. I am just personally a huge strawberry fan.
